We butcher every Wednesday. So give us a call and book your critter for the upcoming butcher day. Then drop it off around 9:00 CET at our facility in Gettysburg, fill out the paperwork, and we will give you a call when its all boxed up and frozen.

We charge $0.95 per lb. hot carcass weight, and a flat $100 for disposal. So a critter weighing 1400 lb. live will cost around $940 to process.

What is "Hot carcass weight"
"Hot Carcass" weight is the weight of the carcass after the skin and all offal is removed, just before its washed and moved into the cooler for aging.

We normally age the beef in the cooler for 11 to 14 days, depending on what the customer prefers. Processing boxing and freezing takes about 3 days.

An average beef should yield around 60% usable boxed meat from the hot carcass weight. So an 840 lb. critter should yield around 504 lb. boxed meat.
